Bircher Muesli with grated apple

If you’re looking for a quick, tasty and satisfying option for your team brunch, look no further than this. Just a handful of ingredients and you’ll be serving a delicious meal.
- 2 cups rolled oats
- 1.5 – 2 cups milk or milk alternative
- 2 tsp cinnamon
- 2 grated apples including the juice (or pears or nectarines if you prefer)
- Toasted granola, almond slivers, honey, more cinnamon, very thinly sliced apples or nectarines, berries. chia seeds etc. as optional extras
Mix the oats, milk and cinnamon together in a large bowl. Add the grated apple and its juice, mix well, cover, place in the fridge and let it soften for at least an hour. Remove from the fridge about 10 minutes before serving. The consistency should be slightly thick and creamy – add a bit of water if you want it slightly less thick.
Dish into small bowls for each person. Place the optional extras in ramekins or bowls and let each person add them as they wish.
